Ingredients:
For the Marinade:
1/2 cup peri peri sauce (store-bought or homemade) HOMEMADE PERI PERI SAUCE RECIPE
2 tablespoons olive oil
2 tablespoons lemon juice
4 cloves garlic, minced
1 teaspoon paprika
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon sugar (optional, to balance the heat)
For the Chicken:
4 bone-in, skin-on chicken thighs or breasts (you can use drumsticks or wings as well)
Instructions:
Prepare the Marinade:
In a bowl, mix together the peri peri sauce, olive oil, lemon juice, minced garlic, paprika, salt, black pepper, oregano, and sugar.
Marinate the Chicken:
Place the chicken pieces in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well-coated.
Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
Preheat the Grill:
Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).
Grill the Chicken:
Remove the chicken from the marinade, allowing any excess marinade to drip off.
Place the chicken on the grill skin-side down. Grill for about 6-8 minutes, then flip and grill for another 6-8 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Baste with Marinade (Optional):
If you want extra flavor, baste the chicken with leftover marinade during the last few minutes of grilling.
Serve:
Remove the chicken from the grill and let it rest for a few minutes.
Serve with your favorite sides, such as grilled vegetables, rice, or a fresh salad.
