GRANDMAS LEMONADE PUMPKIN SCONES
For the scones:
2 cups all-purpose flour
1/4 cup sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/4 cup cold, unsalted butter, cut into small cubes
1/2 cup canned pumpkin puree (not pumpkin pie filling)
1/2 cup lemonade (store-bought or homemade)
1 tsp vanilla extract
For the glaze (optional):
1 cup powdered sugar
2 tbsp lemonade
Zest of 1 lemon
Instructions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, ginger, and nutmeg.
Add the butter: Add the cold butter cubes to the dry mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
Mix in the pumpkin and lemonade: In a separate bowl, whisk together the pumpkin puree, lemonade, and vanilla extract. Pour the wet mixture into the dry ingredients, stirring just until combined. Be careful not to overmix, or the scones may become dense.
Shape the dough: Turn the dough onto a lightly floured surface. Gently pat it into a circle about 1 inch thick. Use a knife to cut the circle into 8 wedges.
Bake: Place the wedges on the prepared baking sheet, leaving some space between them. Bake for 15–18 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean. Transfer to a wire rack to cool.
Prepare the glaze (optional): In a small bowl, whisk together the powdered sugar, lemonade, and lemon zest until smooth. Drizzle the glaze over the cooled scones.

Tips
For extra pumpkin flavor, sprinkle a little cinnamon sugar on top before baking.
