Ingredients:
Ā½ cup passionfruit pulp (about 6 passionfruits)
Ā½ cup granulated sugar
3 large egg yolks
1 whole large egg
Ā¼ cup unsalted butter (cubed)
1 tbsp lemon juice (enhances the flavor)
1 tsp vanilla extract (optional)
Instructions:
1. Prepare a Double Boiler
Fill a saucepan with about 1 inch of water and bring to a gentle simmer.
Place a heatproof bowl over the saucepan, making sure the bottom doesnāt touch the water.
2. Cook the Curd
In the heatproof bowl, whisk together passionfruit pulp, sugar, egg yolks, whole egg, and lemon juice.
Stir continuously with a whisk or silicone spatula over low heat until the mixture thickens (about 8-10 minutes). It should coat the back of a spoon.

3. Add Butter & Strain
Remove from heat and whisk in butter cubes, stirring until fully melted and smooth.
For a silky texture, strain the curd through a fine-mesh sieve to remove any egg bits (optional).
Stir in vanilla extract (if using).
4. Cool & Store
Pour the curd into a clean jar or container.
Place plastic wrap directly on the surface to prevent a skin from forming.
Let cool, then refrigerate for up to 1 week.
