Homemade Passionfruit Curd Recipe šŸˆāœØ

Ingredients:

  • Ā½ cup passionfruit pulp (about 6 passionfruits)

  • Ā½ cup granulated sugar

  • 3 large egg yolks

  • 1 whole large egg

  • Ā¼ cup unsalted butter (cubed)

  • 1 tbsp lemon juice (enhances the flavor)

  • 1 tsp vanilla extract (optional)

Instructions:

1. Prepare a Double Boiler

Fill a saucepan with about 1 inch of water and bring to a gentle simmer.

Place a heatproof bowl over the saucepan, making sure the bottom doesnā€™t touch the water.

2. Cook the Curd

In the heatproof bowl, whisk together passionfruit pulp, sugar, egg yolks, whole egg, and lemon juice.

Stir continuously with a whisk or silicone spatula over low heat until the mixture thickens (about 8-10 minutes). It should coat the back of a spoon.
