Lentil Curry Recipe

Servings: 4

Prep Time: 10 minutes

Cook Time: 30 minutes


Ingredients:

  • 1 cup dried lentils (brown or green), rinsed and drained

  • 1 tbsp olive oil or coconut oil

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 can (14 oz) diced tomatoes

  • 1 can (14 oz) coconut milk

  • 2 cups vegetable broth (or water)

  • 1 tbsp curry powder

  • 1 tsp ground cumin

  • 1/2 tsp ground turmeric

  • 1/2 tsp ground coriander

  • 1/2 tsp paprika (optional, for extra spice)

  • Salt and pepper to taste

  • Fresh cilantro, chopped (for garnish)

  • Cooked rice or naan bread (for serving)

  • Can add vegetables to taste

Instructions:

  1. Sauté Aromatics In a large pot or Dutch oven, heat the oil over medium heat. Add the diced onion(hard vegetables) and and sauté for about 3-4 minutes, until soft and translucent. Add the garlic and ginger, and cook for another minute until fragrant.

  2. Add Spices Add the curry powder, cumin, turmeric, coriander, and paprika. Stir for 1-2 minutes to toast the spices and enhance their flavors.

  3. Cook the Lentils Add the rinsed lentils, diced tomatoes (with their juice), and vegetable broth (and soft vegetable if applicable). Stir well, bringing the mixture to a simmer. Cover and cook for about 20-25 minutes, stirring occasionally, until the lentils are tender.

  4. Add Coconut Milk Once the lentils are cooked, pour in the coconut milk. Stir everything together and let it cook for another 5 minutes to meld the flavors. Add salt and pepper to taste.

  5. Serve Ladle the lentil curry into bowls and garnish with fresh cilantro. Serve with cooked rice or warm naan bread on the side.
